When I placed a wee little zucchini plant in the ground earlier this summer, I had no idea it would end up taking over our entire garden. Don’t get me wrong, I’ll take it! And I’m on a mission this year to not let any of our produce go to waste.
Whether it’s eaten fresh, cooked, baked into something sweet; whether it’s frozen, canned, pickled; whether it’s given to friends, family, neighbors, or the food bank, I refuse to toss the goodness I’ve worked so hard to grow be “forgotten” or “simply not used in time” as often as I have in the past.
When I discovered a massive amount of full-grown zucchini in the garden a couple of weekends ago (I’m still convinced they appeared overnight), I decided to give zucchini bread a go. I have no idea how I’ve lived over a quarter of a century on this earth, yet have never tried this delightful creation, and so I figured it was about time.
So, I went all in… and made three different kinds. After a little research, I decided on a few simple recipes that called for ingredients I (mostly) already had on hand. I definitely wanted something straightforward and traditional, something chocolatey, and something a little different.
I chose to make the three following recipes, and each of them turned out so well!

Jeremy was a huge fan of the simple banana bread, and I couldn’t get enough of the chocolate (it was practically like cake!)
We both loved the lemon raspberry, too – a perfect on-the-go breakfast! I didn’t end up making the drizzly topping for it, and while I’m sure it would be delicious, the bread was just fine without it (and will keep a little longer, too!)
